Asparagus
Asparagus is a great source of folate, vitamins A & C, and many antioxidants. Many people prefer to trim the tough, fibrous stems of asparagus, either by cutting them with a knife, snapping them off by hand, or removing with a peeler.

Asparagus can be kept fresh for about 4 days by wrapping it in wet paper towels, covering it with a plastic bag, and refrigerating it.
