Bell peppers are an excellent source of vitamins A, C, and B6, as well as potassium and folate. They can be enjoyed in many different ways: stuffed, grilled, sauteed, roasted, or even just eaten raw as a snack.

Store uncut bell peppers in the crisper for up to 2 weeks. Cut peppers can be stored in a sealed container or plastic bag with a paper towel for 2–3 days.

Try stuffed bell peppers! Cut off the tops, remove the stem and seeds, stuff with a filling (like veggies, ground turkey, eggs, and more), and bake at 350°F until peppers are soft and filling is cooked through.
