Butternut squash is a great source of vitamins A & C, B vitamins, magnesium, potassium, and manganese. It makes a tasty addition to soups and baked goods. Butternut squash seeds are also edible – try toasting them!

Uncut butternut squash lasts for 2–3 months when stored in a cool, dark place, as sunlight makes it ripen faster. Cut squash will keep for up to 4 days in the refrigerator in a container or plastic bag.

Pureed butternut squash is a great food for infants and can be introduced as soon as they start solids.
