Carrots are an excellent source of vitamins A & C, fiber, and potassium. You don’t have to peel your carrots before you eat them – they have the most nutrients when left unpeeled.

Cut off the green tops of carrots before storing. Carrots can be stored in a closed bag or airtight container in the crisper drawer for up to a week. They can be stored in a water-filled container in the fridge for a month.
