Celeriac (also known as celery root) is a great source of vitamins C & K, B6 vitamins, potassium, and fiber. Celeriac can be enjoyed raw or cooked and has a similar flavor to celery. It is great in salads, purees, soups, and other dishes.

Since celeriac is a root, it should be stored in a cool, dark environment. Store in the coolest part of the refrigerator for up to 10 days. If it is wrapped in plastic, the celeriac can be stored there for several weeks.

Both roasted and pureed celeriac can be served to babies. A vegetable peeler is not strong enough to get through its tough skin, so use a knife to peel it instead.
