Fennel is a good source of vitamin C, potassium, folate, and antioxidants. Every part is edible and can be eaten raw or cooked. Fennel is a member of the carrot family, although the bulb has a sweet flavor like celery.

Cut off the stalks of fennel to separate them from the bulbs. Store the stalks and bulbs in separate plastic bags. They will both keep in the refrigerator for 7–10 day

The way fennel is cut will determine how it should be cooked. Shaved fennel bulbs can be eaten raw or sauteed, while bigger pieces can be roasted. The tops can be used as a garnish.
