garlic
Garlic is a good source of B vitamins and vitamin C and is full of anti-inflammatory compounds. Minced or pureed garlic has a bolder flavor, while slivers or whole cloves of garlic provide a more subtle flavor.

July through October, but available year-round!

Whole bulbs of garlic can stay fresh for up to one month and should be stored in a cool, dark place, which helps maintain freshness and prevents sprouting.
-
Try roasting garlic! Peel the outer layers of the bulb, leaving the skin of the cloves intact. Cut the top of the cloves off, drizzle with olive oil, and bake in foil for 30 minutes. Spread the roasted garlic on bread or use in other dishes.
