Mustard greens are an excellent source of vitamins C & K as well as fiber. They can be steamed, sauteed, stir-fried, or added to soups. They can also be used as a substitute for spinach. Mustard greens is are very versatile – they can act as the vegetable in a dish, the seasoning, or both!

Mustard greens can be stored in a plastic bag in the refrigerator. They will stay fresh for about 3 to 4 days.

Mustard greens tend to have a bitter, peppery flavor. If they are too bitter, add salt or lemon juice in teaspoons until the bitterness is neutralized.
