Parsnips are a good source of vitamins C & K as well as fiber, folate, and potassium. Parsnips are very similar to carrots and can be used in the same way, but parsnips have a much sweeter flavor.

Unwashed parsnips can be wrapped in a paper towel and stored in an unsealed bag in the crisper of the refrigerator, where they will last up to 2 weeks. Make sure to remove greens before storing.

Parsnips are a great first food for babies due to their versatility – they can be steamed and mashed as well as baked into breads and muffins. Just be careful, as raw parsnips are a choking hazard.
