Potatoes are stored best in dark, dry conditions. Be sure to avoid plastic bags, sunlight, and humidity. If stored properly, potatoes can keep for 10 to 12 weeks.

Most of a potato’s nutrients is stored in (or just under) its skin, so don’t peel them unless necessary.
