Sunchokes
Sunchokes, sometimes called Jerusalem artichokes, are a good source of vitamin C, iron, and potassium. Sunchokes have a nutty & subtly sweet flavor. They can be eaten raw or cooked. Try roasting or pureeing them like mashed potatoes!

Sunchokes can be stored in a plastic bag in the refrigerator for up to two weeks.

The skin of sunchokes is edible, and so they do not need to be peeled. Simply give them a good scrub and pat dry before using.
