Yellow squash is a great source of vitamin C. It pairs incredibly well with zucchini and can actually be substituted for zucchini in recipes. Yellow squash can be grilled, sauteed, roasted, or thinly sliced and eaten raw.

Store yellow squash in a plastic bag in the refrigerator crisper drawer for 4 to 5 days. Don’t wash or cut the squash until just before you are ready to use it.
