Beets are a great source of fiber, vitamin C, and potassium and have very high antioxidant levels. Beets sweeten as they are roasted and can be left unpeeled – the skin has nutritional value, too.

Beets can be stored loose in the refrigerator drawer for a few weeks, or until they are no longer firm. If there are greens attached, cut them off to keep beets moist.

Try making beet chips! Slice beets, toss them in olive oil & salt, and let them sit until they release their natural juices (about 15–20 minutes), then bake for about an hour.
